Most store-bought granolas are high in fat, calories and sugar.  This granola is full of flavor and crunch.  Great for breakfast, a snack, or topping for oatmeal or yogurt with fruit.  Come up with your own granola by adding other “extras” like shredded coconut, pecans, walnuts or other dried fruits (apricots or raisins). 

Great gift idea, just package in a labeled mason jar.  So easy to prepare and makes your house smell wonderful.  Try making “sundaes” with kids, let them layer fruit, yogurt and granola in a parfait glass for a healthy treat, breakfast or dessert.

MAPLE PUMPKIN SPICE GRANOLA

makes 5 cups

  • 2 cups OATS, ROLLED
  • 1 cup GOLEAN CEREAL, KASHI BRAND (or other healthy cereal)
  • 1/4 cup PUMPKIN SEEDS
  • 1/4 cup SUNFLOWER SEEDS, kernals
  • 1/4 cup ALMONDS, sliced or slivered
  • 1 tsp CINNAMON, GROUND
  • 1/2 tsp PUMPKIN PIE SPICE
  • 1/2 tsp SALT, SEA
  • 1/3 cup MAPLE SYRUP, 100% PURE
  • 1/4 cup APPLE JUICE, UNSWEETENED, 100%
  • 1 tsp VANILLA EXTRACT
  • 1/2 cup CRANBERRIES, DRIED

1. Preheat oven to 300 degrees. Spray a large rimmed baking sheet with cooking spray.

2. In a large bowl combine all ingredients but cranberries. Stir to coat well.

3. Spread mixture evenly in one layer on prepared baking sheet. Spray top of granola with cooking spray. Bake for 35-40 minutes, stirring every 10 minutes, until lightly browned and crunchy.

4. Cool on a wax paper lined pan. Add cranberries and store in an airtight container. Makes 5 cups granola. Serving size: 1/2 cup.
