Chocolate cake…mmmm, can we just sit here a minute and stare?

Almost everyone has a chocolate sweet tooth that rears its head now and then, or maybe every night after dinner.  My chocolate cake is a definite satisfier for the deepest chocolate craving.  Not to mention it’s lowfat and only 170 calories per piece…uh, can I have another please?

A healthy spin on an old fashioned favorite, reduced calories and fat, but not flavor. Rich, gooey and moist – great birthday cake for kids, or adults too!

Restuarant and bakery chocolate cakes, without frosting, can run a mere 350 calories per slice.  Try my easy, one bowl chocolate chip cake this weekend.  Invite some friends over for dessert and enjoy with a dallop of light whip cream, or lowfat vanilla bean frozen yogurt, and some fresh berries.  Delicious!

serves 12

  • 2 tbsp BUTTER, REGULAR, UNSALTED, melted
  • 1/4 cup SOUR CREAM, REDUCED FAT OR PLAIN GREEK YOGURT
  • 1 cup SUGAR
  • 1/4 cup MILK, 1% or SKIM
  • 2 large EGG WHITES
  • 1/4 cup APPLESAUCE, UNSWEETENED, natural
  • 1 tsp VANILLA EXTRACT
  • 1/2 cup HOT, STRONG BLACK COFFEE*
  • 3/4 cup WHOLE WHEAT PASTRY FLOUR
  • 2 tbsp WHOLE WHEAT PASTRY FLOUR
  • 1/4 tsp SALT, SEA
  • 1/3 cup BAKING COCOA, UNSWEETENED
  • 1 tsp BAKING POWDER
  • 1 tsp BAKING SODA
  • 1/4 tsp CINNAMON, GROUND
  • 1/2 cup MINI CHOCOLATE CHIPS

*even if not a coffee drinker you don’t want to skip this ingredient – enhances the chocolate flavor immensely without the coffee taste, can also sub decaf coffee. Don’t have any in the house…..just grab a to-go cup from your local convenient store or restaurant.

1. Cream together the first 6 ingredients. Stir in vanilla extract and coffee.

2. Stir in flour, baking soda and powder, salt, cinnamon and cocoa powder.

3. Pour into a 9″ round, or 9×9″ square pan, sprayed with cooking spray. Gently sprinkle chocolate chips over the top and bake for 30-35 minutes at 350 degrees, or until toothpick inserted in center comes out clean.

4. Cut into 12 pieces and serve with a dallop of light whipped cream and fresh berries (calories not included in nutrition info) if desired.

VARIATIONS: add chopped nuts, shredded coconut or white chocolate chips.
