8 oz CREAM CHEESE, REDUCED FAT, softened
12 oz REGULAR OR GREEK YOGURT, PLAIN
8 oz LIGHT WHIPPED CREAM
1 tsp PURE VANILLA EXTRACT
1/4 cup FRUIT SPREAD, ANY BERRY FLAVOR
4 tbsp HONEY, PURE
1 small BANANA, RIPE, mashed
16 oz BLUEBERRIES, (Fresh or Frozen)
12 oz RASPBERRIES, (Fresh or Frozen)
- 16 oz STRAWBERRIES, halved or quartered (Fresh or Frozen)
1. In a large bowl mix together softened cream cheese, yogurt, fruit spread and honey until smooth, with an electric mixer. Stir in vanilla, whipped cream and mashed banana.
2. Add fruit to cream mixture and stir until well coated. Pour about 2/3 cup fruit mixture into 18 disposable cups, freeze at least 4 hours. Remove from freezer and refrigerate for a few hours before serving to thaw.
Variations: Add or substitute any favorite fruit (peaches, pineapple, kiwi, mandarin oranges, grapes, etc.) use different fruit spreads or yogurt.
Fruit Popsicles: Blend the fruit mixture in batches in a blender or food processor; place even amounts into popsicle molds and freeze. Yummy cold treat.
