OH, MY….this was my dinner tonight and bursting with flavor.  I pretty much scarfed it down considering how quickly I found my white plate underneath.

Fresh, fresh, fresh and super healthy.  If you don’t like vegetables this is a great way to try them, mixed up with creamy avocado, chicken and black beans.  Along with sweet corn and cilantro you will be wondering how your fork found your plate so fast too.  

 

A quick and easy, after work meal, or lunch to prepare – especially if using leftover chicken.  Can be kitchen to table in 20 minutes….. no drive through food needed here.  Makes a huge, filling salad that won’t leave you feeling weighed down.

serves 4

  • 1 lb CHICKEN BREASTS, BONELESS, SKINLESS – 4 oz. each (or leftover cooked chicken)
  • 6 oz TOMATOES, CHERRY, halved
  • 1/2 medium RED ONION, chopped
  • 1 LARGE AVOCADO, chopped, w/o skin & seeds
  • 1 1/2 cup CORN, FROZEN, cooked and cooled
  • 15 oz BLACK BEANS, rinsed and drained
  • 1 large ORANGE BELL PEPPER, chopped
  • 1/2 LEMON OR LIME, JUICED
  • SEA SALT AND PEPPER TO TASTE
  • 1/2 tbsp RED WINE VINEGAR
  • 2 tsp OLIVE OIL, EXTRA VIRGIN
  • 2 clove GARLIC, minced
  • 2 tsp CUMIN, GROUND
  • 1 tsp CHILI POWDER
  • 1/2 cup FRESH CILANTRO, chopped
  • 8 cup ROMAINE LETTUCE, chopped

1. Season chicken breasts with salt and pepper and grill until cooked through 6-8 minutes per side (or use cooked shredded chicken – great way to use leftover).

2. Combine remaining ingredients (except romaine) for salsa in a large bowl, stir just until combined.

3. On four dinner plates layer 2 cups chopped romaine, 1/4 of salsa mixture and 4 oz. cooked chicken. I don’t like a lot of dressing on my salad so here are some additional topping and/or dressing options if you choose: fresh chopped cilantro, light sour cream, salsa, creamy cilantro dressing (recipe below) and blue corn chips (calories not included in nutrition info).

CREAMY CILANTRO DRESSING:

  • 8 oz. light sour cream
  • 2 Tbsp milk, nonfat (more for thinner consistency)
  • 2 Tbsp fresh chopped cilantro
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Whisk all ingredients together. Add 1/2 tsp lime zest and a little honey, if desired.
