I love pairing citrus with fruit.  The bright fresh aromas and flavors work so well together, especially in a creamy dessert.  My custard is so easy you could make it with one hand tied behind your back.  Well, it might be a bit hard and unsafe to cut the lemon (unless, of course, that’s your hidden talent).

Smooth, silky and rich, no bake lemon custard.  Lightened up with low fat Greek yogurt and light cream cheese, no one will notice it’s drastic calorie and fat reduction from regular custard.  And with 9 grams of protein it won’t leave you with that empty-stomach-need-more-sugary dessert syndrome after. Even kids will love this fruity treat. 

Elegant and easy for backyard parties and Memorial Day barbecues.  Easily made ahead or transported. Refrigerate until ready to serve, then top with fresh fruit and any other toppings.  Makes you want to grab a spoon and dive in!

CREAMY LEMON YOGURT CUSTARD with FRESH BLACKBERRIES

serves 6

  • 12 oz LOWFAT, PLAIN GREEK YOGURT
  • 8 oz WHIPPED PLAIN CREAM CHEESE, LIGHT (room temp)
  • 1/2 cup LEMON CURD (store-bought or homemade)
  • 1 LEMON, ZESTED & JUICED
  • 1/4 cup POWDERED SUGAR
  • 2 tsp HONEY
  • 1 tsp VANILLA EXTRACT
  • 3 cups FRESH BLACKBERRIES OR BLUEBERRIES

1. In a large mixing bowl combine cream cheese and lemon curd with an electric mixer. Add yogurt, lemon juice, zest, honey and powdered sugar; mix until smooth and creamy, then fold in vanilla extract (add more honey or powdered sugar to taste, if desired).

2. Pour equal amounts of custard into six dessert bowls or glasses. Top each with 1/2 cup fresh berries and garnish of lemon slice or lemon peel. Add a small, crisp, sugar cookie round to the side for a special treat (cookie calories not included in nutrition info).

Variations: Top with toasted slivered almonds, lowfat honey granola or other favorite fruit.
