Sorry I kind of fell off the grid there for a while. I just returned home from a week-long family vacation in the Caribbean. Land of clear blue water, hot sun and beautiful beaches. The laid back atmosphere is refreshing (until you leave the St. Thomas airport late and miss your connecting flight in the States … we’ll just say it was a long trip home yesterday). “No worries” is the verbal and nonverbal motto in St. John.
One day we took a boat tour of the British Virgin islands of Virgin Gordas, Jost Van Dyk and other surrounding islands. Stopped for a snorkel at the famous Waterlemon Cay, swam in for a drink at the Soggy Dollar Bar and soaked up the golden sunshine at various beaches.
The food was also excellent. We ate authentic SJ barbecue, fresh caught seafood like Mahi Mahi, fruit smoothies and even labored to crack open our own coconut my nephew captured at the beach. The whole trip stirred up new recipe ideas and warm weather inspired flavors for me. Below is a Jerk Chicken with Mango Salsa recipe to get you started… it’s an oldie but a goodie.
